We loooove waffles or pancakes in the morning :-) Lots of protein and particularly fats to start your day. Recently I started making them like this. They can be completely gluten free if you buy certified oats - ask your health food store. Of course, you could also buy gluten free types of flour, like amaranth or buck wheat (although not everyone likes the taste of that).
The night before:
1-2 tbs ground seeds (sesame, sunflower, flaxseed)
2-3 tbs ground nuts etc (cashews, hazelnuts, almonds)
5 tbs ground rolled oats
Mix everything in a bowl and cover with 1 cup (more or less) of whole milk and cover with a cloth. If you want them to sour a bit (super for digestion), leave it on the kitchen counter for the night. My older son hates sour things, so I put it in the fridge over night. Soaking helps break down the phytic acid in oats and nuts.
In the morning:
Mix 3 eggs well with a little honey and perhaps vanilla. Add the mixture from the night before and stir it well. It should be rather thin, not like porridge. If it's too thin, add a little ground oats. If it's too dry, add a little whole milk
Fry them as waffles of pancakes in butter or coconut oil.
One of my sons loves them if I add some cocoa (pure, no sugar) :-)
If you don't have time to make this in the morning, you could make a big batch on the weekends and freeze, so you just have to heat them in the oven or a pan before serving.
I keep the ground nuts, seeds and oats combined in a large glass jar so they're ready for use and I don't have to measure everything separately.
